Este trabajo explora el impacto de los grandes núcleos urbanos en los procesos
históricos de cambio agrario y de transformación de la industria agroalimentaria.
Utilizando Barcelona y el sector del aceite de oliva en Cataluña como caso de estudio,
ofrece evidencia sobre la evolución del consumo y las entradas de aceite de oliva en la
capital catalana durante la segunda mitad del siglo XIX y el primer tercio del siglo XX.
El trabajo muestra el crecimiento y la importancia de Barcelona en el consumo y comercio
de este producto. Considerada como el mayor mercado de aceite de oliva en España a
principios de la década de 1920, este estudio también formula diversas hipótesis sobre el
alcance y los mecanismos a través de los cuales esta gran ciudad del Mediterráneo
occidental podría haber influido en la trayectoria y las transformaciones que experimentó
el sector del aceite de oliva catalán antes de la Guerra Civil española. [-]

This work explores the impact of large urban centres on historical processes of
agrarian change and the transformation of the agri-food industry. Using Barcelona and
the olive oil sector in Catalonia as a case study, it presents evidence on the evolution of
consumption and inflows of olive oil in the Catalan capital during the second half of the
19th century and the first third of the 20th century. The paper shows the growth and
significance of Barcelona in the consumption and commerce of this product. Considered
the largest olive oil market in early 1920s Spain, this study also posits various hypotheses
regarding the extent and mechanisms through which this major western Mediterranean
city could have influenced the trajectory and transformations experienced by the Catalan
olive oil sector before the Spanish Civil War. [-]
