Negocio, tecnología e instituciones en la molienda del trigo en Castilla la Vieja y León a mediados del siglo XVIII

Abstract

En este texto se propone una aproximación a la molturación del trigo a mediados del siglo XVIII en su vertiente mercantil, tecnológica e institucional. Para ello, se emplea como fuente principal las Respuestas Generales del Catastro del Marqués de la Ensenada en Palencia. La hipótesis que se plantea es que las condiciones de obtención de harinas fueron sumamente arcaicas en esas tres dimensiones, pero al tiempo lo suficientemente eficientes como para garantizaron el suministro de pan a la población castellana sin alterar el statu quo entre la nobleza, la iglesia y los concejos. No obstante, las cuentas de los grandes molinos desvelan que este equilibrio comenzó a quebrase en torno a 1780, justamente cuando se implantó la nueva política agraria de la Ilustración.

This text offers an approximation to the milling of wheat in the middle of the eighteenth century with respect to its mercantile, technological and institutional nature. For this purpose, the general responses of the Catastro del Marqués de la Ensenada in Palencia have been used. The hypothesis is that the conditions for obtaining flour were extremely archaic in these three dimensions, but at the same time efficient enough to guarantee the bread supply to the Castilian population without altering the status quo between the nobility, the church and the councils. However, a review of the accounts of the large wheat mills reveals that this balance started to break down around 1780, just when the new Enlightenment agricultural policy was implemented.
