La cocina de una casa nobiliaria era semejante a un cosmos de tradiciones, cultura y habilidades.
A comienzos del siglo XIX todavía se mantenía toda la complejidad y riqueza propia del Antiguo
Régimen tanto en las exquisiteces empleadas en sus recetas como en los procedimientos de elaboración
propia y en el sostenimiento de una despensa que hiciese posible la alimentación del linaje en las
diferentes épocas y estaciones. El recetario de la Casa de Bureta en Aragón es un claro ejemplo de
esta gastronomía señorial que recoge toda una cultura de la buena mesa de varias mujeres de esta
familia solariega, entre las que se encuentra la heroína de «los Sitios» de Zaragoza en 1808, María
Consolación Azlor y Villavicencio, condesa de Bureta y luego baronesa de Valdeolivos. [-]

The kitchen in a house of the nobility was akin to a cosmos of traditions, culture and skills. At the beginning
of the 21st century the complexity and richness of the Ancient Regime continues to be maintained,
equally in the delicacies employed in their recipes, the in-house procedures and the maintenance of
a pantry in order to feed their lineage through different periods and seasons. The Bureta’s Cookbook
in Aragon is a clear example of this lordly gastronomy which brings together the culture of fine dining
from various women of this ancient and noble family. Among these women can be found the heroine of
the sieges of Zaragoza in 1808, Maria Consolación Azlor y Villavicencio, countess of Bureta and later
baroness of Valdeolivos. [-]
