In this paper we propose a cross sectional study of some of the variables involved in major crops present in Seville's field during the sixteenth and seventeenth centuries. This represents a comprehensive treatment and undifferentiated from each of the crops. The principal element is constituted by a set of issues around social themes mostly, in which the human component becomes the main factor of historical research. This has made us focus on aspects such as the influence of the market, the so called "hunger for land" or the more or less direct relationship of human protagonists with the exploitation. The interest in issues such as socio-professional structure, participation in agricultural activities in different sectors of the population, or more specifically the relationships established between landlords and tenants is added. Planteamos en este trabajo un estudio transversal de algunas de las variables que intervienen en los principales cultivos presentes en el campo sevillano de los siglos XVI y XVII. Esto supone un tratamiento integral y no diferenciado de cada uno de los cultivos. El eje organizador lo constituye un conjunto de aspectos en torno a asuntos principalmente sociales, en los cuales el componente humano se convierte en el condicionante fundamental de la investigación histórica. Ello nos ha hecho centrar la atención en cuestiones tales como la influencia del mercado, la conocida hambre de tierras o la relación más o menos directa de los protagonistas humanos con la explotación. A ello se añade el interés por aspectos como la estructura socioprofesional, la participación en la actividad agraria de distintos sectores de la población o más específicamente las relaciones que se establecen entre los arrendadores y los arrendatarios.
